The simplest solution might be to shift your holiday meal planning mentality from a big centerpiece of a turkey or ham to smaller side dishes. Four or five side dishes would be plenty to substitute for a traditional main dish. Aim for a variety of legumes (beans), grains, and vegetables. Some ideas: squash stuffed with brown rice pilaf, mashed sweet potatoes, bean cassoulet or salad, and those traditional dishes, cranberry sauce and green bean casserole.
If you can add cheese or eggs for protein—consider serving quiche. However, if you are feeding vegans and still want a main dish, tofu or soy crumbles are good choices and they blend into foods easily. For example, a tofu meat loaf can be a substitute for turkey. Or go ethnic with veggie enchiladas or lasagna using soy crumbles, a protein source that’s simple to use in place of ground meat.
