Wheat-free Recipes?

Does anyone have any good wheat-free bread and/or cookie recipes? Or any wheat-free recipes, for that matter? My 6 yo dd was just diagnosed with a wheat & rye allergy. I'm trying to keep her diet as normal as possible, but wheat is in so many things! I'd love to find some really good recipes that the whole family can enjoy -- and I can afford to make. Buying special 'wheat-free' items at the grocery is totally blowing our budget. Any help would be greatly appreciated. Thank you!!

Question re: portobello-broccoli stir-fry

In the recipe it says: With small metal spoon, scrape underside of mushroom caps to remove dark gills and stems.

Why does this need to be removed?

Healthy eating

I love recipes so I signed up and started searching. I have found some yummy ones. But I have some suggestions since we are all trying to eat better. Avoid the following and do some reseach on ways to cook with alternatives. Instead of white flour try oat flour or spelt. Avoid completely anything with high fructose corn syrup and partially hydrogenated oils in them. You can get more and more products without partially hydrogenated oils now and I think it will soon be the same with high fructose corn syrup. I use cold pressed oils, mainly olive oil in every recipe that calls for vegetable oil and have never had a problem. I use apple juice instead of sugar in sweet breads and it works great. Anyway, their are alternative ways to eat healty. Just thought I would share a few.
flour question

Can anyone tell me, when a recipe (for bread specifically) calls for all-purp flour, can you substitute for whole wheat or even soy flour? Will it change the outcome? Thanks!

For the Brownie Lover!

These are great! No one will ever know, if you don't tell.

Black Bean Brownies

1 box brownie mix
1 can (15 oz) black beans

Open the can of black beans, rinse well. With beans back in the can, add enough water to cover beans. Put in blender or food processor and puree. Add puree to brownie mix, and then bake according to package directions.

You DO NOT add the eggs or oil that the recipe calls for, JUST the black bean puree!

Makes 20 brownies

Let me know if you like them

Mushroom Strudel Appetizer

I'm wondering if the Mushroom Strudel Appetizer on the site can be made ahead and frozen, and if so, would I tightly wrap it before baking and freeze, or do I have to bake it first? Also, in either case, would I thaw before finishing, and how l long would the baking time be adjusted to do you think? Thanks for your feedback. Also, I noticed there were no reviews of this recipe...has anyone tried it? Thanks, Kathi
