Quinoa sets the stage for sweet and nutty flavors to mingle perfectly. From Prevention Healthy Cooking.
Prep Time:15 min
Start to Finish:35 min
makes:4 servings
3tablespoons chopped pecans
2/3cup quinoa
2/3cup orange juice
2/3cup water
1/3cup chopped dried apricots
1/4cup golden raisins
2green onions, finely chopped
1tablespoon chopped fresh cilantro
1tablespoon lemon juice
1teaspoon olive oil
1/2teaspoon salt
1.In small nonstick skillet, toast pecans over medium heat, stirring often, 3 to 4 minutes or until lightly toasted. Tip onto a plate; let cool.
2.Place quinoa in a fine-mesh strainer; rinse under cold running water 2 minutes. In medium saucepan, stir together quinoa, orange juice and water. Heat to boiling. Reduce heat; cover and simmer 12 to 15 minutes or until liquid is absorbed. Transfer the quinoa to a large bowl. Add apricots, raisins, green onions, cilantro and toasted pecans. Stir in lemon juice, oil and salt.

I made this recipe as a side for dinner and it was delicious! It was more tangy and sweet, so would make a great breakfast option (without the onions)as well...a gluten-free alternative to oatmeal. The recipe makes 4 small servings and was so good that I am making a double batch next time!

This recipe was a big hit a a recent pot-luck. So many didn't know of this great high fiber grain. The wonderfulness... I think is that you simmer it with 1/2 orange juice/water... anyway I'm rating it a big 5. deb:-)

saved my vegan nephew!
This caught my eye in your email and I promptly forgot about it..until shortly before thanksgiving dinner my vegan nephew called to say he was coming..in a panic (and living far from town) I scoured the pantry and found quinoa..remembered the recipe, looked up the exact ingredients..I had them all and made. My 3 teenagers were the taste testers..and the youngest (also the pickiest) gave it a two thumbs up and said he'd eat that any night of the week. It was extremely easy to throw together (even in the middle of multiple holiday side dishes & desserts) and ended up wiped out. It will definitely go in my "favorites" box..especially on busy nights where I don't want to fool around for long.
