Whole wheat couscous, feta cheese, oregano and more collaborate in this refreshing toss-together salad. From eatbetteramerica.

makes:4 servings (1 1/2 cups each)
Couscous
1 1/2cups water
1/4teaspoon salt
1cup uncooked whole wheat couscous
Dressing
1tablespoon chopped fresh basil
1teaspoon chopped fresh oregano
1/4teaspoon salt
2tablespoons olive or canola oil
2tablespoons balsamic vinegar
Salad
3/4cup coarsely chopped cucumber
3/4cup coarsely chopped yellow or green bell pepper
1/4cup sliced green onions
1medium tomato, seeded, chopped
1can (15 oz) chickpeas or garbanzo beans, drained, rinsed
1/4cup crumbled feta cheese (1 oz)
1.In 2-quart saucepan, heat water and 1/4 teaspoon salt to boiling. Remove from heat; immediately stir in couscous. Cover; let stand 5 minutes. Fluff couscous with fork; cool 20 minutes.
2.Meanwhile, in small nonmetal bowl, mix dressing ingredients.
3.In large bowl, stir together cooled couscous and all salad ingredients except cheese. Pour dressing over salad; toss gently to coat. Refrigerate at least 30 minutes to blend flavors. Just before serving, sprinkle with cheese.
