Barley Bonus
Barley is loaded with fiber—the soluble kind that helps to lower blood cholesterol. Start slowly so you have time to get used to more fiber!
Just 1 cup of cooked barley packs about 6 grams of fiber. This virtually fat-free whole grain also contains complex carbohydrates, B vitamins and protein. To this stew, reminiscent of chili, you can add 1 can of rinsed and drained kidney beans.

makes:4 servings
3/4lb extra-lean (at least 90%) ground beef
2medium onions, chopped (1 cup)
1/2cup uncooked hulled or pearl barley
1cup water
2to 3 teaspoons chili powder
1/2teaspoon salt
1/2teaspoon pepper
1medium stalk celery, chopped (1/2 cup)
4cups tomato juice
1.In 4-quart Dutch oven, cook beef and onions over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2.Stir remaining ingredients into beef mixture. Heat to boiling; reduce heat. Cover; simmer about 1 hour or until barley is tender and stew is desired consistency.

Barley-Burger Stew
This sounds great but I used one pound ground round and a can of tomatoes with green chilis. I also added a Tablespoon cumin and 2 teaspoons oregano. I used V8 instead of tomato juice. We loved it with adaptations. Thanks. ACE

Nice in theory
The recipe was really easy to make but my family wasn't impressed at all. My husband thought it was too bland (I didn't add any salt while cooking)and my older sons who normally love spicy stuff didn't like the spice in this recipe. Overall, it didn't work for us.
