Spinach-Artichoke Dip

The addition of artichoke hearts and Parmesan cheese update this classic cold dip. From eatbetteramerica.

makes:2 1/2 cups (10 servings)

1box (10 oz) Cascadian Farm® frozen organic cut spinach, cooked, cooled and squeezed to drain
1/2cup artichoke hearts (from 14-oz can), drained, finely chopped
2medium green onions, chopped (2 tablespoons)
1small clove garlic, finely chopped
1 1/2cups fat-free sour cream
1/4cup freshly grated Parmesan cheese
1/4cup fat-free mayonnaise
1/4teaspoon coarse salt (kosher or sea salt)
1/4teaspoon pepper
1.In medium bowl, mix all ingredients. Refrigerate 2 hours before serving.
2.Serve with crackers or raw vegetables.

You'll be sad when it's gone!
This is a really tasty little appetizer if you like spinach artichoke dip (and who doesn't!). I used cottage cheese instead of the mayonnaise and put mine in the microwave for a minute or two and it was better hot.

Suggestion...
I make a similar version of this recipe, except I use either Fat Free Philly cream cheese or the Whipped version, which is still pretty low-cal. I get the frozen organic chopped spinach (microwave), and then dump the cream cheese in on top of the hot spinach to soften, add the artichoke hearts, some black pepper, garlic salt and a little parmesean cheese. The cream cheese makes for a super creamy and satisfying dip....great with veggies!

This is low fat??!
Excellent substitute to the fatty spinach artichoke dip I love to order as an appetizer when we're out to eat. My family couldn't believe this was a low-fat "healthified" recipe!
