Minted Honey-Lime Fruit Salad

Refresh your morning with this low-calorie breakfast salad that delivers big on fiber. From Prevention Healthy Cooking.

makes:8 servings

1teaspoon grated lime peel
2tablespoons lime juice
3tablespoons honey
3tablespoons chopped fresh mint
1/2small honeydew melon, cubed
1/2cantaloupe, cubed
1pint fresh strawberries, halved and hulled
2cups fresh pineapple or mango cubes
1.In large bowl, stir together lime peel, juice, honey and mint.
2.Add honeydew, cantaloupe, strawberries and pineapple. Toss to combine.
