A fresh take on chicken salad. From Prevention Healthy Cooking.
Prep Time:15 min
Start to Finish:30 min
makes:4 Servings
3small chicken breast halves
3stalks celery, sliced
1bunch fresh chives, finely chopped
1/2cup low-fat plain yogurt
1/4cup light sour cream
1 1/2teaspoons dried tarragon leaves
2tablespoons slivered almonds, toasted
Salt, if desired
Freshly ground black pepper, if desired
1bag (10 oz) mixed salad greens
1.Spray skillet with cooking spray; heat over medium-high heat. Cook chicken 4 minutes on each side or until chicken is no longer pink when centers of thickest pieces are cut. Remove from heat and let chicken stand at least 10 minutes until cool enough to handle. Chop chicken into small pieces.
2.In large bowl, mix chicken and remaining ingredients except salad greens. Serve chicken salad on salad greens.

This is a wonderful, healthy salad, especially during the summer months. A great way to use leftover chicken.

LOVE IT!!!
I love this recipe! To simplify it even more, I use canned chicken. I also use fat-free sour cream and yogurt to make it even healthier.

Just Ok
I made this last night for dinner, and both my fiance and I thought that there was definitely something missing. The yogurt/sour cream mix was nice and light but overall this salad was lacking in taste.

Very Good
I made this salad for a Wellness Lunch-n-Learn at my office and it was a huge hit. There were no leftovers, made with Tomato-Basil Pasta. Excellent choice, I used a rotisserie chicken from the grocery and mixed everything just before the class.

This salad was delicious!! It was quick and easy and had great flavor. I've never tried tarragon, but I'm happy that i used it. It added a lot of flavor. It's also sooo nutritious.
