Go vegetarian with a perky noodle salad that's ready in less than 30 minutes.
Prep Time:20 min
Start to Finish:20 min
makes:8 servings
1package (8 oz) lo mein noodles
1/3cup reduced-fat peanut butter spread
1/4cup reduced-sodium soy sauce
1/4cup orange juice
1/4teaspoon ground red pepper (cayenne)
3medium carrots, shredded (2 cups)
1large red bell pepper, cut into 1/4-inch strips
6medium green onions, sliced (6 tablespoons)
1/2cup dry-roasted peanuts
1.Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain.
2.In small bowl, mix peanut butter, soy sauce, orange juice and red pepper until smooth.
3.In large bowl, toss noodles, peanut butter mixture and remaining ingredients.

A little sweet but good
Very good, but a little sweet. Next time I'll make it with whole wheat noodles and pack it with more veggies. Still pretty good!

Yummy
Easy dish, great taste. I added bean sprouts and peapods to the veggies. I also used some orange zest with the orange juice. YUMMY!

Yummy!
I doubled the reciepe so that my sister and I could eat it for lunch at work all week. It was just as good at the end of the week as it was at the beginning. I used green pepper instead of red, and used crunchy peanut butter instead of adding nuts and I think it turned out great. I also substituted whole grain pasta for the lo mein. Will definitely be making this again!

My grocery store didn't have lo mein noodles so I substituted whole grain spaghetti. Yummy, easy, leftovers store well and make a great change of pace for the old lunch box.

This salad is satisfying eye-candy. It's quick to make. I often use peanut butter to help me regulate my glucose levels when I've gone too long between meals and get the diabetic "nervous jitters". I am happy to have a recipe that travels well also. I have taken this dish to work as my lunch and I felt in balance all day. Try it, often.
