Potatoes are a root vegetable that grow in the ground. Eating the skin of potatoes provides fiber that helps with digestion.

For a nice crunch, put these flavorful cooked fries under the broiler for a few seconds. From Prevention Healthy Cooking.

Start to Finish:25 min
makes:4 servings

2large russet potatoes, sliced into 1/4-inch-thick lengthwise strips
1egg white, lightly beaten
1/4teaspoon paprika
1/8teaspoon salt
1/8teaspoon pepper
1.Heat oven to 400°F. Coat baking sheet with cooking spray.
2.Brush potatoes with egg white. Sprinkle with paprika. Bake about 20 minutes, or until fries are nicely browned. Season with salt and pepper.
