Minestrone Pasta Salad

Minestrone Pasta Salad
Recipe Tip
Glorious Garbanzos
Garbanzo beans are loaded with plenty of fiber--the soluble kind. Start slowly so you have time to get used to added fiber in the diet!
Did You Know...
Minestrone means "big soup" in Italian. This thick, hearty vegetable soup is at the other end of the soup spectrum from Italy's minestrina-- or "little soup"--that has a thin broth and smaller pieces of vegetables.

really good!
I really liked this recipe a lot, although I changed it just a bit to sautee the carrots and bell pepper in olive oil and a little salt. Tastes wonderful! Super easy! Thank you.

Awesome with modifications
I made this tonight with a few modifications, and it was quick, simple and delicious. First I made it as the recipe directed me (without dressing), but I added a few things to give it more flavor and change it according to my preferences. -I used a yellow pepper (what I had and my favorite) -1 Tbsp olive oil + 1 tbsp basil and oregano for the dressing -I only partially drained the tomatoes so that the juice would add to the sauce -I included celery and zucchini, and two extra carrots -Saute everything (as another user suggested) before adding to the pasta. -Added a lot of salt and pepper

Quick and Easy
This was pretty tasty, but its real strength was in the speed of preparation. I sauteed the peppers, carrots (and I added celery) and beans in the pan first--and I really recommend this step--the carrots are too hard without it, and even with this step the prep is very quick. I prefer this without the dressing, so I served it and the cheese on the side, for people to ad as much or as little as they liked. Very quick and easy.

Really good recipe. I like the contrast between the crunchy vegetables and the softer beans. It makes for a dynamic dish. I recommend using Newman's Own Italian dressing. It has a really good flavor and adds a really good flavor to the dish.
