Take your tastebuds on an adventure with this sophisticated salad. From Prevention Healthy Cooking.

makes:6 servings
1/3cup chopped red onion
2tablespoons honey
1tablespoon olive oil
1/4teaspoon grated lime peel
2tablespoons lime juice
1/4teaspoon freshly ground black pepper
1/8teaspoon salt
3cups cut-up ripe cantaloupe
2ripe plums, thinly sliced
1bunch watercress, tough stems trimmed
2tablespoons crumbled goat cheese or feta cheese
2tablespoons sliced almonds or pumpkin seeds
1.In salad bowl, stir together onion, honey, oil, lime peel, lime juice, pepper and salt with fork until combined.
2.Gently stir in cantaloupe, plums, watercress, cheese and almonds until coated with honey mixture. Serve immediately.

Interesting spin
I joined a fruit and veggie co-op in my area, and when I received a cantaloupe I looked at it wondering what to do with it since I do not like them. I decided to see if I could find a recipe for it and came across this salad. I figured what the heck and gave it a try. While melon has not become my new favorite fruit, this recipe definitely makes it taste much better. A friend who likes cantaloupe really enjoyed this as well.
