Spicy Rice with Black-Eyed Peas

Mix up the colorful bell peppers. Try red, yellow, orange or green peppers, or use a combo. From eatbetteramerica.

3/4cup uncooked instant rice
1large green bell pepper, chopped (1 cup)
1tablespoon chopped fresh or 1 teaspoon dried oregano leaves
1/4teaspoon salt
1/8teaspoon ground red pepper (cayenne)
1medium onion, chopped (1/2 cup)
1clove garlic, finely chopped
1can (14.5 oz) stewed tomatoes, undrained
1can (15 to 16 oz) black-eyed peas, drained
1.In 10-inch skillet, heat all ingredients to boiling, breaking up tomatoes and stirring frequently; reduce heat.
2.Cover; simmer about 10 minutes or until liquid is almost absorbed.

this was my first experiment with black-eyed peas and it was delicious! i added tofu to it and made it a main dish instead of a side dish. i even ate the leftovers cold the next day and it still tasted really good :)
