1medium onion, chopped
1slice bacon, snipped
2cloves garlic, minced
1can (15 oz) no-salt-added cannellini beans (white kidney beans), rinsed and drained
1can (14.5 oz) Muir Glen® no-salt-added diced tomatoes, undrained
1 3/4cups Progresso® reduced-sodium chicken broth
1teaspoon dried thyme, crushed
1/8teaspoon black pepper
3cups baby spinach leaves
Toasted baguette slices and/or fresh thyme sprigs (optional)
1.In a large saucepan, cook onion, bacon, and garlic about 5 minutes or until onion is tender. Stir in beans; cook 1 minute more. Stir in tomatoes, chicken broth, dried thyme, and black pepper. Bring to boiling; reduce heat. Cover and simmer for 20 minutes.
2.Remove from heat. Mash bean mixture slightly with the back of a wooden spoon. Stir in spinach. Let stand, covered, for 1 minute to wilt spinach.
3.If desired, serve with toasted baguette slices and/or garnish with fresh thyme sprigs.

Just like Maggiano's
A friend and I ran across this soup on the Vegas strip and I went looking for the recipe. After adding 6oz cooked italian sausage it turned out I had the same taste with less calories.This has become a favorite soup at our house.

Tuscan White Bean Soup
VERY TASTY! Broth takes on a wonderful flavor. This soup is filling. I put in three slices of bacon and would make it this way again!

Easy, fast and Oh So Delicious!
If onions came in a can you could almost call this the Best soup made from cans of vegies. Ok so thats a bit simple. So easy I made it in the short time it required. The only thing I did different was I used Hunts Fire Roasted diced tomatoes, I thought the fire roasted would add a bit more favor. Its amazing! I walked a cup across the street to my friend and within minutes she called me. She said I could make this for her again anyday! I'll give her the recipe so she returns the favor I did her. :) Give it a try! You will make it again and again, in fact I am bringing the recipe camping this summer, for a cool nite or even late breakfast...it always rains when we camp! LOL~
