8dried manicotti shells
Nonstick cooking spray
1cup chopped fresh mushrooms
3/4cup purchased shredded carrots
3or 4 cloves garlic, minced
1cup light ricotta cheese or low-fat cream-style cottage cheese
3/4cup shredded reduced-fat mozzarella cheese (3 ounces)
2eggs, lightly beaten
1/4cup grated Parmesan cheese
2teaspoons dried Italian seasoning, crushed
1(14.5 ounce) can Muir Glen® no-salt-added diced tomatoes, undrained
1cup bottled roasted red sweet peppers, drained and chopped
1.Preheat oven to 350°F. Cook manicotti shells according to package directions; drain. Rinse with cold water and drain again. Set aside.
2.Meanwhile, for filling, coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add mushrooms, carrots, and garlic to hot skillet. Cook for 3 to 5 minutes or just until vegetables are tender, stirring occasionally. Remove from heat; cool slightly. Stir in ricotta cheese, ½ cup of the mozzarella cheese, the eggs, Parmesan cheese, and Italian seasoning. Spoon filling into cooked manicotti shells.
3.For sauce, place undrained tomatoes in a blender or food processor. Cover and blend or process until smooth. Stir in roasted red peppers. Spread about 1/3 cup of the sauce into the bottoms of four 12- to 16-ounce ungreased individual baking dishes or a 2-quart rectangular baking dish. Arrange stuffed manicotti shells in individual baking dishes or large baking dish, overlapping shells slightly if necessary. Pour remaining sauce over manicotti.
4.Bake, covered, for 20 to 25 minutes for individual baking dishes or 35 to 40 minutes for large baking dish or until heated through. Uncover and sprinkle with the remaining 1/4 cup mozzarella cheese. Bake for 5 minutes more. Let stand for 10 minutes before serving.

Awesome
OH MY GOODNESS!! The Three-Cheese Manicotti was fabulous. It did not taste low calorie or low fat. It was full of flavor. I added fresh basil to the stuffing mixture and it was wonderful. Thank you eatbetteramerica for helping my family eat better!

My family loved this dish. It was easy and quick for me to make. The carrots give it just the right crunch.

not so good
My daughter liked it but complained the carrots gave it a bad texture/ my husband and I give it thumbs down- i might try it again by making a dif sauce-leaving the sweet peppers out and delete the carrots

Tasty
Easy to make and flavorful. I expected this dish to be somewhat on the bland side since it has very few spices. I was surprised. It was extremely tasty. Give this one an A+.

Fantastic
My husband loved this. The only suggestion I would make is be sure to drain the vegtables, the extra moisture makes the filling very runny.

Yummy
We loved this!! I would put about half the amount of italian seasoning that it called for, it was a little much for me... but as a whole, this was great! Loved the mix of tomatoes and red peppers for the sauce, but I did add a liitle seasoning to it.

Not the best
I tried this recipe last night & was not happy with the results at all. The cheese filling was rather good but the sauce was not. I would recommend leaving out the sweet red peppers or make your own sauce. Also the reduced fat mozz. cheese did not melt well. You should use regular mozz. & just eat the extra calories. Believe me it would be worth it.

Amazingly simple and just so good. My husband does not eat meat and this was a great alternative which we could both enjoy.

Wow was that good!
My family and I loved this! At first I thought 2 manicotti would leave me still hungry but, to be honest, I was only able to eat one!! I used cottage cheese because I had it in the house and we could not tell that it was not ricotta. I will definitely make this again!
