makes:4 Servings
46-inch corn tortillas
4teaspoons olive oil
1medium onion, chopped
1cup canned Progresso® black beans, rinsed and drained
1cup chopped seeded tomato
1cup shredded reduced-fat Monterey Jack, cheddar, or mozzarella cheese (4 ounces)
2tablespoons chopped fresh cilantro
1clove garlic, minced
1fresh jalapeño chile pepper, seeded and finely chopped
1.Preheat oven to 425°F. Place tortillas on an ungreased baking sheet. Lightly brush tortillas on both sides with 1 teaspoon of the oil. Bake about 3 minutes; turn. Bake about 3 minutes more until lightly browned and crisp.
2.Meanwhile, in a large skillet, heat the remaining 3 teaspoons oil over medium-high heat. Add onion, chile pepper, and garlic; cook until onion is tender. Stir in black beans and tomato; heat through.
3.Sprinkle tortillas with half of the cheese. Spoon the bean mixture over the cheese. Sprinkle evenly with the remaining cheese. Bake about 4 minutes or until cheese is melted. Sprinkle with cilantro.

Incomplete Recipe
Sad panda. Instructions mention to add chile pepper and garlic. They are not mentioned in the ingredients list. How do I know how much to use?! Really want to try this recipe!

exceeded all of my exceptions!!!
This is really good i was kind of hesitant about making this i don't really like beans or corn tortillas but it was actually super good i thought i would need to put sour cream but it is not needed it is super good and super easy and fast to make this will be added to my family's menu!

LOVE these!
My whole family loves these tostadas. They are a regular menu item in our home. I use a can of Rotel tomatoes in place of the diced tomato. Have added chicken sometimes too. These are a delicious easy go-to dinner!
