makes:6 servings (about 1 1/3 cups each)
1lb extra-lean (at least 93%) ground beef
1jar (16 oz) Muir Glen® organic mild salsa
1cup Muir Glen® organic tomato sauce (from 15-oz can)
1 1/2cups water
2cups uncooked regular or multigrain elbow macaroni
1cup Green Giant® Niblets® frozen corn
1/2cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1.In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
2.Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender.
3.Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

very bland
someone compared it to hamburger helper, I agree. if I made this again, I think I'd add taco seasoning to the meat first.

Spice it up
I have made this several times, I spice it up a bit with hot salsa and chipotle corn from Green Giant. Makes great leftovers too.

instant hit in my house. I did add taco seasoning, black beans and diced onion, I also used ground turkey. We added the cheese and sour cream ourselves. It was very good!

Better than expected!
I needed a quick, cheap meal on a working weekend and this seemed to fit the bill nicely. I swapped the beef for TVP and added black beans (I'm a vegetarian) for extra protein, used a whole (small) bag of frozen corn, medium salsa, and added a bit of cumin and cayenne for a kick. I also used "smart" pasta (extra vitamins/minerals/ALA). The taste is brilliant and the prep is so blissfully easy...I did have to cook it a bit longer than recommended and added a bit of extra water, maybe 1/2C or so. I probably wouldn't serve it to a dinner party or my boyfriend's family, but on a quick, casual night, it works perfectly.

Very good
I used taco seasoning instead, added onions to to the hamburger which gave it even more flavor. Overall this recipe is one the best!!!! Gotta try it to believe it :)

Really good but bland
Would need a lot more seasoning for a kick since it is bland and added more cheese but other than that it was great! Made a lot of food for two people and we ended up eating it for 2+ dinners

Delicious!
I made this last night, and my husband and I loved it! I probably should have cut it in half because it definitely was a lot of food for two...but it was simple and delicious! We added more cheese to the top than it called for, because we love cheese!

I love this meal, I make it all the time - i do, however, add red onions to it at the end, I use turkey meat and a little more seasoning and medium salsa instead of mild for more flavor - i also use veggie cheese instead of regular cheese, when its shredded it melts easier than usual

Way too bland. someone else compared it to hamburger helper. I agree. If I ever make it again, I might try using taco seasoning on the meat first.

Glorified Hamburger Helper
This recipe was okay. It tasted fine, but there really did not seem like that much of a difference between this and a box of hamburger helper, except that this recipe took a lot longer, though it is healthier and does involve actual food. Still, it is mediocre, even with the added diced green chiles.

DEE-LICIOUS!
This was the first recipe I tried from this site and it was soooo good! Me and my boyfriend couldn't get enough. Not to mention, there was so much food leftover that I had lunch and dinner for two days after. I am definitely going to make this at least once a week. MEXICAN WEDNESDAYS!!!

This was a very good, very easy to prepare family dinner. I would have preferred a tad more spice, so next time I may try adding a can of Rotel. My kids loved it!! (PS I added extra corn)

Easy & Simple
This was extremely easy to make. My husband & 3yr old loved it. My daughter kept asking for more until we finally had to cut her off. I will add more corn next time. If you don't like corn- it's not overwhelming. If you enjoy corn- add more. There are 3 of us w/large appetites & we had plenty of leftovers. I would also suggest using a larger skillet. Mine was on the verge of an over-flow. We will defenitly make this again. Enjoy :)

VERY GOOD and EASY!
Instead of tomato sauce I pureed a can of Rotel and I also used the Mexicorn can of corn. The Rotel spiced it up nicely. My husband (who is extremely picky) loved it! I also used penne pasta instead of elbow because it was all I had. Will make again.

GREAT RECIPE - Wonderful basic recipe you can adjust to your taste! I like to use ground turkey instead of beef and use GreenGiant Mexicorn (it has red and green bell peppers) instead of frozen Niblets and I add chopped green onion as well. I serve medium salsa for those who prefer it a little more spicy and cheese/sour cream on the side to omit some calories! Delicious!!!

I made this tonight for the first time and my hubby and I both loved it. We also added a can of black beans in and used medium salsa to give an extra bit of flavor. Next time we both agreed a side of corn bread would go well with this meal. Great, healthy, and EASY recipe!

One of my favorites
Love this dish! So quick and easy, and I love that the pasta cooks in the skillet instead of a separate pot. I make it with medium salsa to add a little more heat.

Very tasty
My family loved this, but I did make several changes. I used ground chicken and seasoned it while it cooked with a dry packet of taco seasoning. I also used brown rice pasta! We just sprinkled a little cheese over each serving rather than the whole dish, then each person could monitor there portion.

Surprisingly good
I thought this dish might just be for the kids, but I quite enjoyed it. I replaced the beef with turkey and you couldn’t tell the difference. I also used the multigrain pasta (my new favorite). If you don’t have much time to work over the stove top this is a quick and easy recipe.

My new favorite!
This was great! I used 10oz of extra lean ground turkey instead of the beef and fat free cheese, and I even added 8 oz of sliced black olives. It took off 90 calories!! This was very easy to make.

wonderful flavor!
This recipe was definitely a hit in my family! I used 1 lb of ground turkey that had taco seasoning in it, which gave it that extra kick. I also added a little extra corn because my brother and I love it. We forgot to put the cheese on top but I don't even think it needed it! It's even healthier without it! :)

Delicious!
I made this for my family for dinner one night, and it was a hit! My husband, our 5 year old, and even our 2 year old loved it. It smelled great as it was cooking, and it tasted even better. I made no changes to the recipe. My husband and 5 year old did add extra shredded cheese to their own plates, but even without the extra it was great. Good comfort food, not hard to make, and basic ingredients. We will definitely have this again.

My whole family loved this recipe! I never have left overs when I make it! The only thing I do differently is put in a can of rinsed black beans to add some fiber and ground turkeybreast instead of beef. I always use whole grain pasta. Its super yummy!

This was delicious. Kindof like goolash but better with the crunch of the corn. I used canned sweet corn because its cheaper. This is definately going to be a regular dinner at my house!

Very tastey
This was a delicious recipe that even my kids loved, even though the salsa I added was a bit spicy. I used ground turkey and added fresh cilantro at the end with the cheese that gave it a nice added flavor. Very Good!

I just cooked this tonight. The dish was very tasty but, in my opinion, needed more sauce. The recipe calls for 1 cup of tomato sauce ( i used the whole can) and 1 jar of salsa. Also, instead of putting the cheese in the skillet, put all of the pasta in a baking dish, top it with cheese, and put it in the oven for a little bit. Overall, this dish was very tasty and healthy but my only concern was the need for more sauce.

So tasty
This recipe was great! i was very surprised as many low fat versions always seem to be missing something. I added some jalapenos and chili powder to spice it up a bit...served with baked chips and a tablespoon of low fat sour cream! It was great! My husband even liked it!

This was amazing...my family LOVED it. I'd recommend adding some crushed tortilla chips before the cheese to give it some crunch. I love the black bean idea in sub for the meat--will try that next time.

Added taco seasoning to meat and used reduced-fat Mexican blend cheese instead of plain cheddar. Boyfriend LOVED it. Portions were HUGE. Definitely a hearty meal-- totally couldn't tell it had been "healthified".

WOW!!!!
Having been a vegetarian for 30+ years I substituted TVP (texturized vegetable protein) for the ground beef (1 cup dry reconstituted w/1 cup hot water)in the skillet then proceeded w/recipe instructions. It was easy to prepare and excellent. Hot pepper seeds were added by my husband for a spicier taste. He gave it a thumbs up so it will become a favorite in this house:-)

I had a pound of ground turkey that I didn't know what to do with. I logged in to this website & there was the recipe. It is absolutely wonderful!!! I didn't have any tomato sauce so I used a can of tomato soup & it tasted great. We will definately make this one again.

This is an amazing recipe - so very easy and amazingly delicious!!! It makes a huge amount and is very reasonable in cost. The best part is that my tiny 12 year old daughter had five servings and my 18 year old son had four, then ate the leftovers for a bedtime snack! This has NEVER happened to me before with any recipe. Excellent
Made this for dinner tonight and it was fantastic. Highly recommend this recipe, and add your own twists if you want. I added taco seasoning to the meat and topped it all off with sour cream! This one will fast become a family favorite!
