Mediterranean Chickpea Salad

Go Greek with this tasty and colorful low-fat dish. From Prevention Healthy Cooking.
Prep Time:15 min
Start to Finish:30 min
makes:8 servings

1can (15 oz) chickpeas, rinsed and drained
3plum tomatoes, chopped
2roasted red peppers, chopped
1/2small red onion, quartered and thinly sliced
1/2cucumber, peeled, halved, seeded, and chopped
2tablespoons chopped parsley
2cloves garlic
3tablespoons lemon juice
1 1/2teaspoons extra-virgin olive oil
1 1/2teaspoons flaxseed oil
1/4teaspoon salt
1.In a large bowl, combine the chickpeas, tomatoes, peppers, onion, cucumber, parsley, garlic, lemon juice, olive oil, flaxseed oil, and salt. Toss to coat well. Let stand for at least 15 minutes to allow the flavors to blend.

Chickpea Salad
This is absolutely amazing. Not a really big fan of chickpeas but this is beyond delicious. Gotta at least try it once!

My company's healthcare team and caterer served this at a recent lunch-n-learn and it was fabulous. It was so fresh and light. A real pleasure to the palet.

Delicious
I made this salad for myself to bring to work. It was so easy to make and transport. This salad is so great I can't wait to make it for my family and friends at the next barbeque.

My boyfriend and I really loved this. I diced all ingredients smaller than shown in the picture and didn't use as much of the onion as we are not very big on raw onions. I was surprised that they weren't more prominent but all of the ingredients mixed very very well. I also made a batch with tomato basil feta as suggested. It was still very good but I think it takes away from the freshness you get from just the salad alone.
