Not Impressed
I was so excited to try this recipe, but I was let down. The dough was hard to make. I thought it was very bland. Since I was making it for my boyfriend and myself, we put lean pork in it....but that did not help it out too much. This recipe has potential. I will make it again, but am going to add A LOT of spices to give it some flavor!

Great with a few changes...
This was really good, and very filling. My husband liked it a lot, but we both had a hard time finishing our half.
I made a few changes... As tomatoes where I live are really expensive right now, I used canned diced tomatoes with jalapeños. Before the cheese, I put on about 1 tsp cilantro. Next time, I will use about 1/2 cup canned corn in the bean/salsa mix, as well as some other seasonings. I also used a spring mix to get some spinach and good lettuce.

Santa Fe Foldover
Very good! Not quite seasoned enough for me, but that could be because I used mild salsa. Next time I will also add some taco seasoning to the bean and salsa mixture.

I make this once a week. It's quick, easy, an filling. My partner and I just bake it split it down the middle even though it say's it makes 3 servings. I just add more lettuce and baby spinach and alot of medium salsa on top.
YUMMMMMMMMMMMM

WOW!
Again I say "WOW" to the people who made this recipe. I made it for the first time last night and my husband (who both is NOT a veggie eater, nor a HEALTHY eater) loved it! He wanted to know when we were going to have it again, lol. I know the time to cook says it takes from 25-30 minutes but mine was perfect at 15 minutes. Thanks again!

This was very good! I live in a house full of men, so i did add some meat to the recipe. I cooked flank steak cut into thin strips and seasoned with McCormick Montreal Steak Seasoning and some Lemon Pepper, and put that in the foldover before adding the bean/salsa mixture. Also put some fresh guacamole on top. YUM!! My whole family really enjoyed it!
