Stuff pita bread halves with veggies and homemade hummus made with white beans and fresh basil. From eatbetteramerica.

makes:4 servings
Hummus
1can (15 or 19 oz) Progresso® cannellini beans, drained, rinsed
2tablespoons fresh lemon juice
1tablespoon olive oil
1/4teaspoon salt
1small clove garlic, chopped
1/8teaspoon ground red pepper (cayenne)
2tablespoons chopped fresh basil leaves
Sandwiches
4whole wheat pita (pocket) breads (6 inch), cut in half to form pockets
1 1/2cups loosely packed fresh spinach
4very thin slices red onion, cut in half
8thin slices tomato, cut in half
1.In food processor bowl, place all hummus ingredients except basil; process 1 to 2 minutes or until smooth. Add basil; pulse to mix.
2.To assemble sandwiches, spoon about 2 tablespoons hummus into each pita bread half. Place spinach leaves, onion and tomato slices in each.

Great for a light dinner
I made this and the hummus taste just like what you get in good middle eastern places, my only modification is that i added a little avocado to the pitas it was great

In Israel we use chickpeas for making Hummus, we are lucky enough to be able to buy the chickpeas frozen and easy to prepare the dish. could you please advise if the amount of fiber is as much as in the beans? Thanking you for any advice,
