This quick-to-assemble baked fish is loaded with flavor and the topping keeps the fish moist. From eatbetteramerica.

makes:4 servings
1lb halibut, cod, haddock or other firm-texture fish fillets (about 3/4 inch thick), cut into 4 serving pieces
2tablespoons reduced-fat mayonnaise
1/2teaspoon finely grated lemon peel
1/8teaspoon pepper
2tablespoons Progresso® Italian style bread crumbs
2tablespoons grated Parmesan cheese
Lemon wedges, if desired
1.Heat oven to 450°F. Line 15x10x1-inch pan with foil; spray with cooking spray. Place fish fillets in pan.
2.In small bowl, stir mayonnaise, lemon peel and pepper until blended. Spread over top of each fillet. In small bowl, mix bread crumbs and Parmesan cheese. Spoon evenly over mayonnaise mixture; pat crumb mixture lightly into mayonnaise.
3.Bake 12 to 15 minutes or until fish flakes easily with fork. Serve with lemon wedges.

amazing
this dish is SO good. Not a fan of mayonnaise but you can keep it light, add a little garlic power - and its SO delicious and SOO easy to make.

Parmesan Crusted Fish
This Recipe is delicious! I made Parmesan Crusted Tilapia for myself and I made Parmesan Crusted Catfish for my boyfriend(catfish needed to cook a little longer). One word, DELICIOUS!

Mmmmm
This was a very light recipe that complimented the fish well. So easy to make. I'll warn you: you're going to eat more than one serving, that's for sure. Next time, I would coat all sides with the lemon mayo and parm-bread crumbs. It was delish!
