Corn tortillas create a tender layer that’s so delicious filled with chicken, cheese and salsa. From Prevention Healthy Cooking.
Prep Time:40 min
Start to Finish:1 hr 10 min
makes:8 servings
1lb boneless, skinless chicken breasts, cut into strips
1large onion, halved and cut into thin wedges
1large clove garlic, finely chopped
2cups (16 oz) fat-free ricotta cheese
1cup (8 oz) reduced-fat sour cream
1can (4 oz) chopped green chilies
1/2cup chopped fresh cilantro, if desired
2teaspoons ground cumin
1/8teaspoon salt
3cups Muir Glen® organic salsa, any flavor
8corn tortillas (6-inch diameter), cut in half
1 1/4cups shredded low-fat Monterey Jack cheese (5 oz)
1.Heat oven to 350°F. Spray 13x9-inch rectangular baking dish with cooking spray.
2.Spray large skillet with cooking spray; heat over medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove to a medium bowl. Wipe skillet with paper towel. Spray with cooking spray. Heat over medium heat. Add onion and garlic. Cover and cook, stirring occasionally, 7 to 8 minutes or until lightly browned. Add to chicken in the bowl.
3.In another medium bowl, stir together ricotta, sour cream, green chilies, cilantro, cumin and salt.
4.Spread 1 cup of the salsa across bottom of prepared baking dish. Arrange half of the tortillas evenly over salsa. Spread half of the ricotta mixture over tortillas. Top with half of the chicken mixture. Top with 1 cup of the remaining salsa and 1/2 cup cheese. Repeat layering with remaining tortillas, ricotta mixture and chicken mixture. Sprinkle with remaining 1 cup salsa and 3/4 cup cheese.
5.Bake 30 minutes or until heated through. Loosely cover with foil if the cheese browns too quickly.

Delicious!
This was a super easy recipe that tastes great! The only changes I made were to use Tostitos brand salsa and Weight Watchers brand Mexican Style Cheese Blend. Next time I will dice the red onion, add black beans to the ricotta mixture, and chop up the corn tortillas (since they all didn't fit in the baking pan). You definitely can't tell that it's healthy. My boyfriend, who loathes health food, even told me that he loved it, and I should make it more often, because this is one healthy dish he'll actually eat on a regular basis :-)

Good starter recipe. This takes nowhere near 40 min. to make. For less time, I used fully cooked chicken fajita breast strips. I omitted the chilies & cilantro and used a small can of mild Rotel tomatoes with a jar of red Cactus sweet salsa, used flour tortillas, cottage instead of ricotta cheese and a blend of taco, monterey jack & chedar cheeses plus added about 1/4 c. of melted white cheese sauce (Red Cactus brand). YUM!!!

yum!
my mom and i loooved it, but my sister did not. i kinda expected that though so it doesnt really mean much! she is very picky. anyways i used less slasa than it called for because my mom doesnt like things too spicy and it was still great! also used flour, not corn tortillas and didnt use chilies or cilantro or salt. will definitely make it again/

Loved It!!
This recipe was absolutely great, my husband and kids loved it..I didn't have any fresh cilantro but love the taste so I substituted Goya cilantro soup base. I also mixed my salsa with taco sauce because I didn't have enough salsa. Next time I may double up on the tortillas though.

Great!
I made a few substitutions to this fantastic recepie, I used wheat wraps and instead of the green chilies which I couldn't find at the store I just thinly sliced green peppers and sauteed them with the onion. You can't even tell the cheese filling is practically fat free. I just heated some up in the microwave at my job and my co-workers said how great my lunch it smells.

Great meal
I made this the other night and took the advice of one poster to double the chicken. My wife thought there was too much meat but the rest of the family loved the addition. I used a "corn and bean" salsa for the recipe and we really think that added alot.

Too mushy
Not enough substance in this making it a pile of mush once it is done. I would double the amount of tortillas and chicken next time. I would also reduce the green chiles by half - they added too strong of a flavor leaving it hard to taste much else.

This was definitely delicious and worth all of the prep time! I made it to share with a neighbor and she asked for the recipe after her first bite. I would absolutely make this again.
