Corn and green chiles jazz up this wholesome soup—it's just right for a chilly day.

Start to Finish:55 min
makes:6 servings (2 cups each)
1large onion, chopped (1 cup)
2teaspoons chili powder
1teaspoon salt
1teaspoon ground cumin
2cloves garlic, finely chopped
1can (6 oz) spicy tomato juice
3cups water
1cup dried lentils, sorted, rinsed
1can (14.5 oz) Muir Glen® organic diced tomatoes, undrained
1can (4.5 oz) chopped green chiles, undrained
1cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
2small zucchini, cut into julienne (matchstick-size) strips (2 cups)
1.In 3-qt saucepan, heat onion, chili powder, salt, cumin, garlic and tomato juice to boiling; reduce heat. Cover; simmer 5 min.
2.Stir in water, lentils, tomatoes and chiles. Heat to boiling; reduce heat. Cover; simmer 20 min.
3.Stir in corn. Cover; simmer 10 min. Stir in zucchini. Cover; simmer about 5 min or until lentils and zucchini are tender.

So yummy!
This is a wonderful soup! The serving size is huge too - it fills you right up. I even used the plain tomato juice, and it was nicely spiced. I will definitely be making this soup again and again.

This soup really hit the spot. A little time consuming but very easy to make. Very hearty and filling - the 2 cup serving was almost too much! I would definitely recommend this recipe. However, I did make a few adjustments: - Sauteed the onions in a tsp of olive oil before adding the rest of the ingredients - Used 3 cloves of garlic instead of 2 - Replaced tomato juice with tomato sauce (which made a thicker broth) - Replaced chili powder with red pepper flakes (only thing I had on hand) - Used 2 cups of low-sodium chicken broth and 1 cup of water - Didn't include the green chiles (forgot to buy them!) - Replaced zucchini with summer squash

This soup is great - it's very hearty and healthy. A dollop of sour creme and some fresh cilantro really helped add to the flavor.

lentil vegetable soup
This soup is really good, the only change I made was to use ff chicken broth.Very good nice kick to it.
