This soup really hit the spot. A little time consuming but very easy to make. Very hearty and filling - the 2 cup serving was almost too much! I would definitely recommend this recipe.
However, I did make a few adjustments:
- Sauteed the onions in a tsp of olive oil before adding the rest of the ingredients
- Used 3 cloves of garlic instead of 2
- Replaced tomato juice with tomato sauce (which made a thicker broth)
- Replaced chili powder with red pepper flakes (only thing I had on hand)
- Used 2 cups of low-sodium chicken broth and 1 cup of water
- Didn't include the green chiles (forgot to buy them!)
- Replaced zucchini with summer squash
