Lemon-Poppy Seed Waffles

Calcium, from dairy foods like milk and yogurt can help build bones. Look for skim, fat-free or low-fat varieties.
Do-Ahead
Get a head start by making waffles for the freezer. Wrap cooled waffles in foil or in a resealable freezer bag, and store for up to two months. To serve, reheat frozen waffles on a cookie sheet in a 350°F oven for about 10 minutes, or pop them in a toaster.
Serve-With
Serve waffles with fresh fruit like raspberries, strawberries, blueberries or a combo.

makes:8 (4-inch) waffles

2cups Fiber One™ Complete pancake mix (from 28.3-oz box)
2tablespoons sugar
1tablespoon poppy seed
1cup cold water
1tablespoon grated lemon peel
1/4cup fresh lemon juice
2containers (6 oz each) Yoplait® Light Fat Free lemon cream pie or very vanilla yogurt
Fresh fruit, if desired
1.Heat waffle maker. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
2.In medium bowl, stir pancake mix, sugar, poppy seed, water, lemon peel and lemon juice with fork or wire whisk until smooth.
3.For each waffle, pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker.
4.Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter. Serve waffles topped with yogurt and fruit.
