No-Bake Cranberry Nut Cookies

Individually wrap these hearty cookies to take along on days when "on the go" is a must.
Substitution
Substitute walnuts or peanuts for the cashews, if you like. Bits of any dried fruit can be substituted for the dried cranberries.
No baking needed! Just a few minutes of stove-top prep and you’re on your way to a cookie packed with cereal, fruit and nuts. From eatbetteramerica.

makes:24 cookies

4cups Fiber One® Honey Clusters cereal
1cup chopped dried cranberries
1/2cup roasted unsalted sunflower nuts
1/3cup cashew pieces
3/4cup packed brown sugar
1/2cup corn syrup
1/4cup creamy peanut butter
1teaspoon vanilla
1.In large bowl, mix cereal, cranberries, sunflower nuts and cashews.
2.In 2-quart saucepan, mix brown sugar, corn syrup and peanut butter. Heat to boiling over medium-high heat, stirring constantly. Boil and stir 1 minute. Remove from heat; stir in vanilla.
3.Pour syrup over cereal mixture, stirring until evenly coated. Drop mixture by scant 1/4 cupfuls onto waxed paper. Cool completely, about 30 minutes.

These were delicious and very easy to make. My husband almost ate the whole batch in one sitting he liked them so much!!!

no bake cranberry cookies
I have made these cookies with different cereals and nut for years. I tried to make different food for my childern so they would eat breakfast. I is one of the hardest meals to get childern to eat.
