This tasty recipe is loaded with high fiber muffin mix. Insoluble fiber from bran helps to keep things moving through the digestive tract.
Special Touch
Add 1/2 teaspoon pumpkin pie spice to enhance the pumpkin flavor.
Variation
For added flavor, toast nuts in ungreased heavy skillet. Cook over medium-low heat for 5 to 7 minutes.
Health Twist
Skip the topping and just sprinkle with powdered sugar.

Use a high-fiber muffin mix to make delicious and fiber-rich pumpkin dessert bars. From eatbetteramerica.

Bars
1box (15.3 oz) Fiber One™ apple cinnamon muffin mix
1/2cup canned pumpkin (not pumpkin pie mix)
1/2cup water
1tablespoon vegetable oil
1/2cup fat-free egg product or 2 eggs
Topping
3oz 1/3-less-fat cream cheese (Neufchâtel), softened
1/4cup powdered sugar
1teaspoon milk
1/2teaspoon vanilla
1/4cup chopped walnuts
1.Heat oven to 400°F. Spray bottom only of 9-inch square pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and egg product just until blended (batter may be lumpy). Spread in pan.
2.Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
3.In small bowl, mix cream cheese, powdered sugar, milk and vanilla until smooth; drizzle over bars. Sprinkle with walnuts. For bars, cut into 4 rows by 4 rows.

Apple Cinnamon-Pumpkin Bars
This is easy to make. Instead of the topping I used powdered sugar. Only thing though they are slightly bland. Next time I make these I will add pumpkin pie spice to jazz it up a bit. Worth making - my entire family liked it ;0)
