Streusel
1/4cup packed brown sugar
1/4cup old-fashioned oats
2tablespoons chopped walnuts
1tablespoon no-trans-fat 68% vegetable oil spread stick
Coffee Cake
1box (15.3 oz) Fiber One™ apple cinnamon muffin mix
3/4cup water
2tablespoons vegetable oil
1/2cup fat-free egg product or 2 eggs
Glaze
1/4cup powdered sugar
1teaspoon water
1.Heat oven to 400°F. Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except vegetable oil spread. Cut in spread with fork until mixture is crumbly; set aside.
2.In medium bowl, stir muffin mix, water, oil and egg product just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel.
3.Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
4.In small bowl, mix glaze ingredients until smooth; drizzle over coffee cake. Serve warm or cooled.
