Black beans are loaded with plenty of fiber—the soluble kind. Start slowly so you have time to get used to added fiber in the diet!
Boost your fiber with a bean and chicken breast skillet dish table-ready in 30 minutes. From eatbetteramerica.

makes:4 servings

1lb uncooked chicken breast strips for stir-fry
1package (1 oz) Old El Paso® taco seasoning mix
1can (15 oz) Progresso® black beans or pinto beans, rinsed, drained
1can (11 oz) Green Giant® Niblets® whole kernel sweet corn, undrained
1/4cup water
Old El Paso® flour tortillas for burritos (8 inch; from 11-oz package), if desired
1.Spray 10-inch skillet with cooking spray. Cook chicken in skillet over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.
2.Stir in seasoning mix, beans, corn and water. Cook over medium-high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened. Serve with tortillas.

Easy Mexican Chicken & Beans
Just made this for dinner tonight, it was very good! I did add a couple pinches of red pepper flakes as I tend to like spicy food. If it was any easier it would have come from a box! Straight to my healthy recipe box.

Quick and easy meal. We spiced it up by adding jalepenos, onion, garlic, and crushed red pepper. We also got HOT taco seasoning. We added a little corn starch to make it a little thicker. Instead of wraps we put it on a bed of lettuce. We topped it off with fresh tomatoes and a little salsa. If you like hot you can definitely spice this one up.

awesome for busy moms!
Everyone loved it, including the picky 10 year old and 5 year old girls. We had it with mexican rice and served on tortillas as tacos. Highly requested ever since I made it, and was SOOOO easy to make! Two thumbs up!

it was good
This was pretty good and super easy and fast. I substituted the rotel for the corn and used southwest black beans with jalapenos to give it some extra flavor. My husband doesn't like chicken and is generally leary of "healthy food" but he really liked it and requested we add it to our rotation. I highly recommend it for an easy weeknight dinner.

We ate this as a wrap. It was so easy and excellent! But I can see this as a side dip chopping the chicken up more and using tortilla squares to dip. Great for us point counters!

SIMPLE recipe! It cannot get much easier than this. And it is a hit. I cook for friends pretty frequently and at first I didn't think this dish went over well. Then they started requesting it and now it's a regular feature on our menu. We also like to eat it as a wrap or taco. If I have a lime, I'll often use a little lime juice in cooking the chicken just to give it a bit of "tang". We love this one! Two thumbs up!!
