Veggie packed and flavored with Parm, this brunch bake is extra inviting! From eatbetteramerica.

makes:4 servings
1cup chopped zucchini
1large tomato, chopped (1 cup)
1medium onion, chopped (1/2 cup)
1/3cup grated Parmesan cheese
1/2cup Bisquick Heart Smart® mix
1cup fat-free (skim) milk
1/2cup fat-free egg product or 2 eggs
1/2teaspoon salt
1/8teaspoon pepper
1.Heat oven to 400°F. Lightly spray 8-inch square (2-quart) glass baking dish or 9-inch pie plate with cooking spray. Sprinkle zucchini, tomato, onion and cheese in baking dish.
2.In medium bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.
3.Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
High Altitude (3500-6500 ft): No change.

I really like this recipe!
I make this recipe at the beginning of the week and have a serving everyday for breakfast. I like to add other veggies that are in season.

This was just OK. I added some chopped peppers and a little garlic, but it was still pretty bland.

I served this for brunch - it was really great, a big hit. I used more vegetables than it calls for plus basil. I also used doubled the eggs to make it more like an egg casserole.

I made this last night for supper. I thought it was great that the serving size is large. I improvised because my husband doesn't like tomatoes. I used green peppers, onions, and celery instead. I also added some obrien style hash browns. It turned out very good and I will definitely use this recipe again because it was so easy!

Great Recipe!!
This is one of the few recipes I've ever found that actually end up looking like the picture, and it tastes AMAZING for breakfast, lunch or dinner.

We made this and also included leftover ham from easter. It was delicious! Everyone loved it. We are making it again tonight and are trying it with some spinach. The hubby isn't a big fan of zucchini.
