Mashed potatoes lovers, unite! The instant mashed potatoes let you make this yummy comfort food fast. From eat betteramerica.

makes:6 servings

2cans (15 oz each) Progresso® kidney beans, drained, rinsed
1jar (16 oz) Muir Glen® organic salsa (any variety)
1cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1medium carrot, chopped (1/2 cup)
1 1/4cups water
1/4cup fat-free (skim) milk
2tablespoons no-trans-fat margarine or butter
1/4teaspoon salt
1 1/4cups plain mashed potato mix (dry)
2tablespoons grated Parmesan cheese
Chopped fresh chives or parsley, if desired
1.In 10-inch nonstick skillet, heat beans, salsa, corn and carrot to boiling. Reduce heat to low; cover and simmer about 15 minutes or until carrot is tender.
2.In 2-quart saucepan, heat water, milk, margarine and salt to boiling. Remove from heat. Stir in mashed potato mix just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip mashed potatoes with fork until fluffy.
3.Spoon mashed potatoes onto bean mixture around edge of skillet. Cover; simmer 5 minutes. Sprinkle with cheese and chives before serving.

good
pretty good if you like comfort food, it was a little bland overall though, even though I used a "medium" salsa, fresh mashed potatoes and fresh corn. But it was quick, very filling, and there have been tons of leftovers.

Great!!!
I am a 14yr old veagan and this worked for me!! I am a very very very picky eater!! I used real potatoes with silk soy milk(original) and it still tasted great also I added a few more beans and corn instead of thirty I put forty because the can had 40. I did not put salsa in it. Also, my moms boyfriend is mexican and he loved it. So this is a very good meal!

Surprisingly Tasty!
I made my own real mashed potatoes, instead of instant (my husband won't eat the "fake" ones). When the bean mixture was cooking, I had my doubts that this meal would be filling or tasty. I was definitely pleasantly surprised by how filling and tasty it was! The small sprinkle of parmesan cheese definitely adds a little extra flavor and completes this terrific meal!

Shepherd's Pie
Love this recipe! In my opinion, I like it better than the real Shepherds Pie, it's not greasy and more tasty. I did add peas and Morning Star crumble(meat substitute) I found the carrots to be a little hard still, so next time I will pre-cook them or use frozen peas and carrots. But, all in all, it was very tasty and I have passed the recipe on to friends. Best of all, my daughter loved it and she is THE pickiest eater!

very nice
This is a very good, quick veg recipe. I wasn't so sure about it when I read it but I was looking for something new. We really liked it. I added some peas and sliced mushrooms for some extra nutrition. You could also add meat crumbles.

Delicious! I loved the recipe although i did not use carrots. I also used a can of dark red kidnet beans and light red kidney beans. I used one packet of Betty Crocker Baked Garlic and Cheddar mashed potatoes. My whole family loved it and believe me there is a total of nine people in my family.

great recipe
Easy to make. I substituted "real" mashed potatoes made from red potatoes for the instant variety. I did have to simmer longer than the 15 minutes recommended. Great as leftovers.
