Start to Finish:1 hr
makes:8 servings (1 1/4 cups each)
6medium red potatoes (2 lb), unpeeled, cut into 1/2-inch cubes
1carton (32 oz) Progresso® reduced-sodium chicken broth (4 cups)
1/2teaspoon salt
1/2teaspoon pepper
1bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen broccoli cuts
1/3cup Gold Medal® all-purpose flour
1cup fat-free (skim) milk
8oz brick 2% milk reduced-fat sharp Cheddar cheese, shredded (2 cups)*
1/2cup fat-free sour cream
4medium green onions, chopped (1/4 cup)
1.In 5-quart Dutch oven, place potatoes; add just enough water to cover. Heat to boiling. Reduce heat; cover and simmer 10 to 15 minutes or until potatoes are very tender. Drain. Reserve 1 cup potatoes; return remaining potatoes to saucepan. In small bowl, mash reserved potatoes with fork; return to saucepan.
2.Stir in broth, salt and pepper. Heat to boiling. Add broccoli. Return to boiling; cook uncovered 4 minutes, stirring occasionally. Reduce heat to medium.
3.In small bowl with wire whisk, stir flour into milk until well mixed. Add milk mixture to potato mixture, stirring constantly. Cook over medium heat, stirring frequently, until mixture thickens and boils. Stir in cheese until melted and smooth. Stir in sour cream and green onions; cook until thoroughly heated.
4.To serve, ladle soup into bowls.

Recipe Question
Recipe states to set aside 1 cup of the potatoes after boiling, but I don't see them again in the remaining steps?

In the Toledo, OH area, we have a company called Roots. They make shredded chicken to market. They use their broth and freeze it to market as well. The sodium content is only 7g for 16oz concentrated. It beats any canned broth by far for sodium content. I don't know if there is a similar company in your neck of the woods, but it is worth it to check out.

With sodium levels like these...
What dietitian signed off on this soup being "healthified" ? Most people on a low sodium diet cannot have more than 1000 mg of salt a day. This soup's serving contains 790 mg of salt! In the words of the late, great rock and roll Hall of Famer Bo Diddley, "R U serious?"

Sodium
This does sound good but I agree the sodium is high. The use of low sodium broth and adding salt is probably part of it. I have found Herb ox makes a no sodium chicken broth granules. It is not bad at all. This can be substituted for the broth by adding the amount of water to the granules to make the required broth. Good luck. I will report back after I get the broccoli to make this soup. I cannot wait.

The recipe looks great except for the 710 mg per seving of sodium. Why is there always so much sodium in soup? Really bad for those of us with chf. thanks

Yum!
This was a great soup and heated up very well for lunch the next day. I used less cheese in the soup and sprinkled some on top each time I heated it up along with some more green onions!

This soup is sooo good. I do not even like broccoli and I loved this soup. My picky three year old son even ate this. I liked the potato and cheese combination and it is good for you. This is my favorite recipe on this site so far.

I made this utilizing what I had on hand, I used regular potatoes,light sour cream, frozen broccoli and a bullon cube to make the broth a little less salt than the receipe called for and it was phenomenal!!! Next time I make this I may try to substitute corn for the broccoli, yum!

Very Cheesy!
I made this with leftover Easter ham chopped up and steamed fresh broccoli leftovers. I used fat free half and half. It was excellent... Actually could have made with a little less cheese.

This has to be one of my favorite recipes from this site. It is so good and filling. My entire family devours it. I made it with corn starch for my MIL who has to eat gluten free and it was still good!! I love it with warm crusty bread.

Sticky Cheese!
The flavor is good. Requires extra work to prepare. The cheddar cheese sticks to everything: the pot, the cooking utensils, spoon rest, bowls, spoons, and storage containers for leftovers. Long, tedious cleanup required. May try it with a different cheese or cheese product.

Needs meat...
The soup alone was pretty good, but a little bland. I added some cooked crumbled turkey bacon to the top of my bowl... YUM! Would also be good with ham.

Very good!
This chowder was easier to make than I thought. Campbell's Cream of Potato soup was my favorite growing up. This recipe beats it hands down! My 15 year old son couldn't get enough.

Easy easy recipe, rave reviews from my family. I shared the recipe with a friend who added meat pulled from a rotisserie chicken and her family loved it - with the chicken added it's a complete meal in a bowl.

Good chowder
I give it 4 stars because it was easy to make and very tasty on account of the cheese but I also added chopped up bits of cooked turkey bacon to add more flavor.

Awesome soup
I ate this for 2 weeks after having oral surgury and not being able to eat much. I put it in my food processor for first week and it went down very well. It is so good I will make it often and for company even if they aren't watching what they eat.

Awsome chowder
Awesome recipe! Both my kids loved it, which is shocking. I used veggie broth since I am a vegetarian and it was really good that way. Not sure, but that may actually reduce the salt.

Delicious Chowder
I made this recipe this week, and while it was a little complicated, it was totally worth it. I love food, but this was one of my better meals, and certainly one of the best healthy meals.

Delicious and Healthy!
This soup was delicious! It was very easy to make. It satisfies the craving for those deliciously cheesy chowders, yet it's much more healthy! Everyone loved it and I will definitely be making it again.

Seems like you could save a little time and trouble by boiling the potatoes in the broth and just using a slotted spoon to remove 1 cup of potatoes for mashing. That way you don't have to drain all the potatoes and bring the mixture to a boil a second time. Also, I would add a bay leaf for extra flavor.

Lower Sodium
This was very delicious. One way to lower the sodium even more is to boil down chicken and make your own chicken stock.

Great as is.....
I thought it was delicious as is. To lower sodium content why not leave out the salt that's called for in the recipe? I don't see any other way. If you can find a sodium free broth that might be an option, but otherwise I think the recipe was "healthified" pretty well.

The ingredients are great, but there is still far too much sodium for most diets. If you can find a way to lower the sodium, we would welcome that!
