Skillet Beef and Vegetable Stew

Skillet Beef and Vegetable Stew
Recipe Tip
Meaty Matters
Lean cuts of lamb, beef and pork supply lots of protein that supplies amino acids that give structure to the body in skin, cell membranes and muscles.
Wow! Just five ingredients and less than 30 minutes—you've got beef steak stew. From eatbetteramerica.
Prep Time:25 min
Start to Finish:25 min
makes:6 servings

1lb lean boneless beef sirloin steak
1bag (1 lb) frozen stew vegetables, thawed
1can (15 oz) chunky tomato sauce with garlic and herbs
1can (14.5 oz) fat-free low-sodium beef broth
2cans (5 1/2 oz each) spicy hot vegetable juice
1.Remove fat from beef. Cut beef into 1/2-inch cubes.
2.Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet about 10 minutes, stirring occasionally, until no longer pink.
3.Stir in remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 5 minutes, stirring occasionally.

We didn't care for the frozen stew veggies used in the stew. I would likely use fresh veggies if I make this again. I did like the taste of the spicy V8 in the stew though.

Well, what can I say? This was a quick meal. All of it's ingredients were basically prepared already. All I had to do was add them all together, there you have it, a great meal the whole family can enjoy!

Not bad for a quick meal. I liked the hot and spicy taste of the V8. We would have it again.
