Savory Black-Eyed Peas with Bacon

A volume of veggies adds a delicious twist to this skillet dish. From eatbetteramerica.

makes:4 servings

4slices bacon, cut into 1-inch pieces
2 1/2cups Progresso® chicken broth (from 32-oz carton)
1cup dried black-eyed peas (6 oz), sorted, rinsed
2medium celery stalks, sliced (1 cup)
1large onion, chopped (1 cup)
1 1/2tablespoons chopped fresh or 1 1/2 teaspoons dried savory leaves
1clove garlic, finely chopped
3medium carrots, thinly sliced (1 1/2 cups)
1large green bell pepper, cut into 1-inch pieces
1/2cup shredded pepper Jack cheese (2 oz)
1.In 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels. Drain fat from skillet.
2.In same skillet, heat broth, peas, celery, onion, savory and garlic to boiling. Boil uncovered 2 minutes. Reduce heat; cover and simmer about 40 minutes, stirring occasionally, until peas are almost tender (do not boil or peas will burst).
3.Stir in carrots and bell pepper. Heat to simmering. Cover; simmer about 13 minutes, stirring occasionally, until vegetables are tender. Stir; sprinkle with cheese and bacon.

This was very tasty, however, there is a great deal of prep and cook time for a side dish. My husband didnt like it, so it will be made again when he isnt home for dinner.

I just tried this recipe last night and it was fabulous!! I was skeptical at first thinking there wouldn't be enough flavor for me, but when I tried the first bite I couldn't believe how my tastebuds reacted! I definately will make this again. Actually, I had some of the leftovers for lunch today. Thanks!
