Super Chicken
Chicken contains vitamin B6, also called pyridoxine. Vitamin B6 is important for digesting proteins, plus it helps to keep hair and nerves healthy.

Substituting brown rice for white rice is an excellent way to boost whole grains. Brown rice supplies four times more magnesium than white rice. Magnesium plays an essential role in keeping hearts beating normally.

Mushroom lovers can use reduced-fat cream of mushroom soup instead of the chicken soup, and add a can of sliced mushrooms with the broccoli.

makes:4 servings

4boneless skinless chicken breasts (about 1 1/4 lb)
1/4teaspoon salt
1/4teaspoon pepper
1 2/3cups water
1cup uncooked instant brown rice
1/2teaspoon dried thyme leaves
1/2teaspoon garlic powder
1can (10 3/4 oz) condensed 98% fat-free cream of chicken soup with 45% less sodium
2cups Green Giant® SELECT® frozen broccoli florets
2tablespoons shredded Parmesan cheese
1.Heat oven to 375°F. Sprinkle chicken with 1/8 teaspoon of the salt and 1/8 teaspoon of the pepper.
2.In 13x9-inch (3-quart) glass baking dish, stir water, rice, thyme, garlic powder, soup, remaining salt and pepper until mixed. Place broccoli evenly over rice mixture. Top with chicken. Cover with foil.
3.Bake 50 to 55 minutes or until rice is tender and juice of chicken is clear when center of thickest part is cut (170°F). Uncover; sprinkle chicken with cheese. Let stand 5 minutes before serving.

boring...
I was hoping to get a good flavor from the 'saucy rice' but it did not take on any flavor from the soup. This meal was bland and boring.

Nothing to special, just like an average cassorole, but easy to make and the chicken was tender. I probably will make this again, when I dont want to put any effort into dinner.

Tasty and Quick
While it does take almost an hour in the oven, this recipe is easy and fast to throw together. Add a little jalapeno for some spice, or keep as is. Guaranteed to be a crowd pleaser.
