Spicy Chili Bean Burgers

Come and get 'em! Veggie burgers packed with fiber-rich cereal are ready in less than 30 minutes. From eatbetteramerica.

makes:5 sandwiches

1cup Fiber One® original bran cereal
1can (15 or 16 oz) spicy chili beans in sauce, undrained
1/2cup quick-cooking oats
1/4cup chopped green onions (4 medium)
1egg, slightly beaten
5whole wheat burger buns, split
1 1/4cups washed fresh baby spinach leaves
5slices tomato
1.Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet.
2.In medium bowl, mash beans with fork until no whole beans remain. Add cereal, oats, onions and egg; mix well. Shape mixture into 5 patties, each about 3 1/2 inches in diameter.
3.Spray 12-inch skillet with cooking spray. Add patties; cook over medium heat about 10 minutes, turning once, until brown.
4.For each sandwich, place 1/4 cup spinach leaves and 1 tomato slice on bottom half of bun; top with bean burger and top half of bun.
High Altitude (3500-6500 ft): Cook patties over medium-high heat about 10 minutes.

good burger
My husband likes spicy foods so I thought I would try this burger on him. He cannot eat beef or turkey burgers and is missing out on them when others have hamburger. Because I do not like spicey food I did not care for this burger but he liked it a lot. Now he can have his 'hamburger' when everyone else has a regular burger (maybe I will make just these next time and have a taste test. Who knows maybe visitors will prefer this.

Not Bad. I played around with it alot though. Added a bit of BBQ sauce, jalapeno's, double the eggs, cereal, and oatmeal. I also added som whey protein powder.

just ok
Out of 5 family members: two liked this recipe, two did not like at all, and one didn't try it because she doesn't eat beans. Therefore, I rated it in the middle. I used ranch style canned beans - next time I try it, I will use chili beans. The patties fell apart easily and were kind of dry.
