Recipe Tip
Top Tomatoes
They’re full of juicy sweetness. And no matter how you slice them, fresh tomatoes are also packed with vitamin C and potassium.

A time-honored favorite for the big “kids” in the kitchen. From Prevention Healthy Cooking.
Prep Time:20 min
Start to Finish:20 min
makes:4 servings

8slices multigrain bread
8slices low-fat Jarlsberg or Cheddar cheese
1large tomato, cut into 8 slices
2roasted red peppers, halved
12large leaves fresh basil
1.Coat both sides of the bread with olive oil-flavored cooking spray. In a large nonstick skillet over medium heat, cook the bread on 1 side for 2 minutes, or until lightly toasted. Do this in batches, if necessary. Remove from the pan.
2.Arrange 4 of the slices, toasted side up, on a work surface. Top with the cheese, tomato, peppers, and basil. Top with the remaining bread slices, toasted side down.
3.Carefully place the sandwiches in the skillet. Cook for 2 minutes per side, or until toasted and the cheese melts.

AWSOME!
I made this wonderful sandwich for my sister's birthday lunch and we both thought it was very good. I will keep this one in my favorites file!

I used mozzarella cheese and spinach since that's what I had available and it was delicious! The mozzarella had a hard time melting, so after the initial grill, I popped the sandwiches in the oven at 350 for about five minutes.

Loved this...
I didn't have the olive oil spray so I just used regular olive oil. I really loved it and was hooked for it the whole weekend. I broke up the pieces of basil into smaller pieces, I loved this so much. Will definetly make this again, my husband even liked it but next time I'm going to try some different toppings.
