Grilled Greek Chicken Sandwiches (Cooking for 2)

Chicken breast is a lean protein that supplies amino acids that give structure to the body in skin, cell membranes and muscles.
Variation
To broil chicken, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.

Cucumber Sauce
1/4cup Yoplait® Original Fat Free plain yogurt
1/3cup finely chopped seeded cucumber
1medium green onion, sliced (1 tablespoon)
1teaspoon grated lemon peel
Dash salt and pepper
Sandwiches
2teaspoons lemon juice
1teaspoon olive or vegetable oil
1/4teaspoon dried oregano leaves
Dash salt and pepper, if desired
2boneless skinless chicken breasts (4 oz each)
1pita (pocket) bread (6 inch), cut in half to form pockets
1small tomato, sliced
2thin slices red onion
1.Heat gas or charcoal grill. In small bowl, mix sauce ingredients. Set aside. (Sauce may become watery if it stands longer than 30 minutes.)
2.In another small bowl, mix lemon juice, oil and oregano. Brush lemon mixture over chicken, coating all sides. Sprinkle with salt and pepper.
3.Place chicken on grill. Cover grill; cook cook over medium heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Wrap pita halves in foil; place on grill 1 to 2 minutes or until warm.
4.Place chicken, tomato and onion inside pita pockets. Top with sauce.

Very good!
My husband and I are huge fans of gyros, so we were slightly skeptical about the "low fat" sauce in this recipe. However, once I made this, we were very pleasantly surprised! I also added a few crumbles of fat free Feta cheese. I will definitely make these again!

So Yummy!
My husband and I both loved this sandwich. We added a tiny bit of low fat feta cheese, and mixed a little green onion into the cucumber dressing! Very tasty.

Grilled Greek Chicken
We had this for dinner recently - it was different and a nice change. The yogurt sauce was a little too chunky for me; next time I think I will run it through the food processor.

Yummy
The sauce was far better than I had expected (being low fat and all). I made a couple of additions: I added a sprinkle of feta to the sauce, used pre-cooked frozen chicken pieces instead of chicken breasts, and put it all in a wrap instead of a pita. It was still delish!
