Pork Chops and Apples (Cooking for 2)

Lean chops and apples baked in one dish to serve two. All you need is a mixed green salad. From eatbetteramerica.

1medium unpeeled cooking apple, sliced
2tablespoons packed brown sugar
1/4teaspoon ground cinnamon
2pork rib chops, 1/2 to 3/4 inch thick (about 1/4 lb each)
1.Heat oven to 350°F. Place apples in ungreased 1 1/2-quart casserole. Sprinkle with brown sugar and cinnamon.
2.Remove fat from pork. Spray 8- or 10-inch skillet with cooking spray; heat over medium heat 1 to 2 minutes. Cook pork in hot skillet about 5 minutes, turning once, until light brown. Place pork in single layer on apples.
3.Cover; bake about 45 minutes or until pork is no longer pink in center and apples are tender.

awesome dish!
i love this dish, it was so easy to make and so yummy. my husband never eats fruits or veggies, but couldn't got enough of this, he tried to steal my plate!!

Easy and delicious!
This recipe was SO easy to make, and it only takes 4 ingredients! What could be better? The apples were so delicious that my husband was asking if there were more. Also, it didn't seem like much food but it was really filling!

My husband was hesitant to try meat with apples. But once he did he LOVED it. My 2 year old cleared his plate! Will make again and again! I even tripled the recipe for a dinner party the other night and it came out great!

Delicious!
I'm not a huge pork fan, but my husband was getting a bit tired of chicken, so I thought I'd give pork a shot. I thought I had brown sugar but I didn't, so I had to substitute with sucanat cane sugar and a bit of honey and it was still delicious! Best pork recipe I've ever tried.

This is a quick and easy recipe -- if you get lean pork, it's a healthy entree. I did not have brown sugar (thought I did), so I used some maple syrup instead. Very yummy! The apples, with the peels kept on, provide some good fiber. Have some green beans wit this and you'll get two servings of fruits and vegetables along with some protein.
