Peppered Pork Medallions in Tangy Mushroom Sauce

makes:4 servings

1pork tenderloin (1 to 1 1/4 lb), cut into 1/2-inch thick slices
1/2teaspoon coarse ground black pepper
1/4teaspoon salt
2teaspoons canola or olive oil
3/4cup Progresso® reduced-sodium chicken broth (from 32-oz carton)
2tablespoons all-purpose flour
1tablespoon balsamic vinegar
1/2teaspoon dried thyme leaves
1package (8 oz) fresh whole mushrooms, cut into quarters
1.Sprinkle both sides of pork slices with pepper and salt. In 10-inch nonstick skillet, heat oil over medium-high heat. Add pork; cook 3 to 5 minutes, turning once, until browned.
2.Meanwhile, in small bowl, mix broth and flour until smooth. Add broth mixture and remaining ingredients to skillet. Heat to boiling; reduce heat. Cover and cook 8 to 10 minutes or until pork is no longer pink in center and mushrooms are tender, stirring occasionally. Serve with rice.

Quick, easy & delicious!

Pork Medallions
We enjoyed this - the meat was fork-tender, the gravy was very good. Nice, hearty dish. Would also be good over egg noodles.
