Tomato-Basil Chicken

Full of fresh pesto flavors, this saucy chicken dish rests on a bed of hot fettuccine. From eatbetteramerica.
Prep Time:20 min
Start to Finish:20 min
makes:4 servings (1 1/2 cups each)

8oz uncooked whole wheat fettuccine
2teaspoons olive or vegetable oil
1medium onion, finely chopped (1/2 cup)
1clove garlic, finely chopped
3medium tomatoes, chopped (2 1/2 cups)
2cups cubed cooked chicken or turkey breast
3tablespoons chopped fresh or 1 teaspoon dried basil leaves
1/2teaspoon salt
1/8teaspoon red pepper sauce
1.Cook and drain fettuccine as directed on package. Cover to keep warm.
2.Meanwhile, in 10-inch nonstick skillet, heat oil over medium-high heat. Cook onion and garlic in oil, stirring occasionally, until onion is crisp-tender. Stir in remaining ingredients except fettuccine; reduce heat to medium.
3.Cover; cook about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft. Serve over fettuccine.

delish!
I made this just as directed using fresh basil. Only had regular spaghetti so I did sub that. Next time I'll add some red pepper flakes or more hot sauce as this was not spicey at all. Very yummy though!

Very Easy and Tasty!
I can't really cook per se but with this recipe, there'd be no mistakes. Instead of using fresh tomatoes, I used canned tomatoes to make it simpler. It's so delicious that everyone thought I've been cooking for years. hehehe. If they only knew...... :)

Simple and Delicious!
This is one of my favorite recipes now! It was so simple (I also used a can of diced tomatoes instead) and delicious using organic vegetables. Best yet - I was able to let it simmer while preparing my salad and other meals for the week and then when I was done - it was ready. Great left-over as well.

We substitute a can of diced tomatoes and add lots of extra garlic to give this already amazing recipe some extra kick. We found the recipe last week and have already made it three times! This is a keeper.

This Rocks!
I have made this dinner twice and each time my husband, a wonderful cook himself, raved! The flavors are so wonderful together - much more elegant than spaghetti. It is very easy and with lite or whole wheat pasta it is 5 points on Weight Watchers! Delicious.

SOOO easy
I'm not much of a cook, but after making this dish, I felt gourmet! It tastes phenomenal and looks like you spent a lot more time in the kitchen than you actually did. Highly recommended.

Delicious!
What a delicious flavors with unexpectedly bold flavors and such a simple and minimal recipe list! Even better is that most all of the ingredients can be prepared before-hand (chopping tom/onions & cooking chicken), so that the actual cook time is minimal.

Pretty Good
This was a pretty good way for my family and I to start to eat healthy it is a lot like spaghetti but not so filling that you feel overfull. I will be making this one again
