makes:8 servings
1/2package (12-oz size) soft silken tofu
1envelope (1 oz) ranch dressing mix
1/2cup soymilk
1bag (12 oz) salad greens with red cabbage and shredded carrots (8 cups)
1cup crumbled blue cheese or favorite shredded cheese (4 oz), if desired
2/3cup roasted soynuts
1.In blender or food processor, place tofu, dressing mix and soymilk. Cover; blend on high speed until smooth and creamy. Refrigerate.
2.Just before serving, drizzle salad greens with dressing; sprinkle with cheese and soynuts.
