This rendition of minestrone is chock-full of vegetables and beans—three kinds of beans, to be exact. From Prevention Healthy Cooking.

makes:1 Serving
2tablespoons olive oil
1onion, chopped
3cloves garlic, minced
5cups vegetable broth or Progresso® chicken broth (from two 32-oz cartons)
1small zucchini, chopped
1cup Green Giant® Valley Fresh Steamers™ frozen cut green beans
1cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn, thawed
1teaspoon grated lemon peel
1/2teaspoon dried rosemary leaves
1teaspoon dried Italian seasoning
1/2teaspoon salt
1/4teaspoon freshly ground black pepper
1can (14.5 oz) stewed tomatoes
1can (15 or 19 oz) Progresso® cannellini beans, drained, rinsed
1can (19 oz) Progresso® red kidney beans, drained, rinsed
2tablespoons chopped fresh basil leaves or 2 teaspoons dried basil leaves
1.Heat oil in large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, for 5 minutes, or until soft. Add the garlic and cook for 1 minute.
2.Stir in the broth, zucchini, green beans, corn, lemon peel, rosemary, Italian seasoning, salt, and pepper. Heat to boiling. Reduce heat to low, cover, and simmer for 10 minutes, or until the vegetables are tender.
3.Stir in the tomatoes (with juice) and beans. Simmer, covered, for 30 minutes. Stir in the basil.
