A little substitute
We substituted a cup of cooked brown rice for the cereal and added a little cilantro. When it came out of the oven we topped it with a little dab of sour cream and salsa. Very tasty!

Won't make again...
Way too much cereal and not enough taste. We didn't like it. Even modifications won't make this any better. Next time, I'll stick to my old favorite recipe for stuffed peppers.

Easy recipe
Both my husband and I liked this. Didn't take too long to fix and is just enough for a meal. I really couldn't tell the fiber cereal was mixed in there. I need more fiber so this is a great way to get it.

Made this tonight and we all liked it. It was easy to prepare and didn't take too long to be done. Next time I may try adding less cereal, as I felt like I could still strongly taste it- but it wasn't too bad!

mexican beef and bean stuffed peppers
What a waste of red peppers! Fixed it tonight and neither my husband or I liked it.

Loved this
This is a definite hit in our home. It has a great flavor, is visually pleasing, portionally satisfying, and very nutritional. I did tweak, and or changed the recipe just a bit. I reduced the cereal to 1/2 C, upped the lean ground beef to 1 1/2 lbs, I preferred it with a bit more meat. Also, the best part, since it is just the two of us, I really liked that it freezes well.

LOVED IT
I LOVE THIS RECIPE. I added a touch of salsa (teaspoon)to the top of the meat mixture right after it came out of the oven. LOVED IT.

I ACTUALLY SWITCHED THIS AROUND A LITTLE. I USED GROUND TURKEY 99% FAT FREE AND USED GREEN PEPPERS. I ACTUALLY MAY TRY IT WITH RED PEPPERS NEXT TIME, A PERSONAL PREFERNCE. i LOVED IT AND SO DID MY BOYFRIEND. YOU HAVE TO LIKE BEANS THOUGH. IT WAS ALSO VERY EASY TO MAKE AND EASY TO CLEAN UP.
