Healthified Turkey-Artichoke Panini

Healthified Turkey-Artichoke Panini
Recipe Tip
What is "Healthified"?
We've replaced ingredients with great-tasting alternatives to create better-for-you recipes that are just as yummy as the original.
Substitution
No cooking spray? You can lightly brush the outsides of each sandwich with a little olive oil before cooking.
Did You Know?
In Italian, the word "panini" just means "small bread" referring to a sandwich or roll. We use it to describe any delicious sandwich filled with veggies, cheese and sometimes meat that is grilled or cooked in a contact-type sandwich maker.

One of my favorites! I make this for lunch using a George Forman, and it always comes out great.

Definitely worth trying!
I made these sandwiches last night and they were quite delicious. My husband LOVED them! I'm not a fan of red peppers, so I left those off, and I forgot to get reduced-fat spreadable cheese because I was shopping with cost in mind. The regular spread was $2.00 cheaper than the other brand that had reduced fat. I do like the fact that I have plenty of ingredients left to make more, especially because the ingredients were a little pricey. (The price is what makes me give it four stars.) Next time I think I will add more spinach and some ground pepper. Also, next time I think I will just grill them up in a frying pan like you would do with grilled-cheese sandwiches, because, in desparation, I used my HUGE George Foreman grill and they never seemed very grilled, just totally flattened! A small George F. grill would probably be ideal, though, if you don't have a regular sandwich grill. All-in-all, I think this recipe was delicious and we will be making these again. :)
