Substitution
If you want cookies with a little less fat content, you can use reduced-fat peanut butter instead of regular. We tested the recipe with 25% less-fat peanut butter spread and had good results.

makes:2 1/2 dozen cookies
1/2cup granulated sugar
1/2cup packed brown sugar
1/2cup peanut butter
1/4cup no-trans-fat 68% vegetable oil spread stick, softened
1egg
2tablespoons honey
1 1/4cups Gold Medal® whole wheat flour
3/4teaspoon baking soda
1/2teaspoon baking powder
1/4teaspoon salt
Additional granulated sugar
1.Heat oven to 375ºF. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter and vegetable oil spread with electric mixer on low speed until well mixed. Beat in honey and egg until well blended. Beat in remaining ingredients until dough forms.
2.Shape dough into 1 1/4-inch balls. Place balls about 3 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with fork dipped in additional granulated sugar.
3.Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

Healthified Peanut Butter Cookies
I made these cookies exactly the way the recipe called for. I loved them and so did my grandkids and daughter. The cookies are soft and very chewy, we couldn't tell that they were made with whole wheat flour. I will be making them again.

I am all for peanut butter cookies. I am also all for making food healthier and I've substituted whole wheat for portions of white flour and reduced sugar amounts etc. for decades. What I don't get is why you want to force odd fat products on folks as healthy. Why not just eat a fewer cookies as a reduction in fat? Folks pushed "margarine" for years as a healthier choice and it turns out the trans fat is terrible for one's health. Why would this stuff any better? At least if it is butter, I know what I am getting.

I haven't tried these yet. I just saw the recipe and think there is a lot of sugar in them for being a healthier version. 1cup for only 2 1/2 doz. plus 2T of honey. Please explain. I just thought a healthier version would of had less sugar.

peanut butter cookies
These cookies were actually quite good. However I thought they were too sweet. Might have been because I did not measure the honey. My husband thought they were great.

a keeper
My husband is a peanut butter fanatic and really liked these cookies. I only made a 1/2 batch so I used one egg white, which will reduce the cholesterol, but using reduced fat peanut butter would help, too. I added chocolate chips to a few of them (because dessert is not dessert without chocolate for me) and they were delicious. This recipe is definitely a keeper. :o)

Very very good! My whole family loved them and no one guessed they are more healthy than usual ones! I used Smart Balance 50/50 because I couldnt find the vegetable oil spread but other than that followed the recipe. Next time will try reduced fat peanut butter, and yes, there will be many next times!!! :)

These were delish!
I loved these cookies and so did my kids. I like them crispy so I let them bake for 10 minutes. Also, I used 3/4 cup of the whole wheat flour and 1/2 cup of regular flour instead of all wheat flour. These are so yummy!

Great Cookies!
I made these exactly to recipe and they came out great! I let my 9-year-old granddaughter make the crosshatching and then let her sprinkle orange sugar crystals on top to make them look seasonal. Even my 18-year-old grandson loved them. Noone knew they were "healthified".

PB cookies
Hi, I am wanting to usr this recipe. The problem I am having is the ingredents. I can not find no-trans-fat 68% vegetable oil spread stick. I have no idea what this is or where I can find it. i lie at my local gracery in the baking isle with the crisco and stuff and can not find it for nothing. I really want to make these. I love pb cookies. Also, I have made the healthly chocolate chip cookie recipe on here and they are out of this world. My kids love them. I always make a double batch and they are always gone in a weeks time. I love this website.

good sub for the real thing
Just made these. Better than I thought they would be. Very peanutty. A little heavier texture because of the wheat flour. I used Splenda sugar and brown sugar. My kids like them and I like that they are a healthier version of the real cookie. Definitely making a double batch next time.

Making it even better for you...
Instead of sugar, I used Splenda Sugar Blend and Splenda Brown Sugar Blend. I used 1/3c of each. I only used 1 tbl of honey and only 1c of the flour. Using Smart Balance 50/50 blend butter and all natural peanut butter. It made 19 cookies with each cookie only being 76 cal; 3.5g fat; 3g protein; and only 3g of sugar. My husband's favorite cookie is peanut butter and he did not know that these were "healthified". Excellent and delicious cookie.

healthified pb cookies
Not bad for a healthier pb cookie. I used smart balance pb and margarine. I'm diabetic and not sure how splenda would work? Will try next time.

Good but....
My dad and I thought this recipe was excellent! Very yummy and looked just like the picture! It did kind of have a wheaty, nature taste. When I first took a bite, it seemed disgusting but then in a few seconds I didn't really mind it. My mom thought it was disgusting and couldn't bare the taste. It basically depends on how high your tolerance level is and what you are used to eating.

My husbands fave cookie is Peanut Butter. So on a snowy day, my kiddos and I thought we would surprise him. WOW! These are great! My kiddos can't tell any difference. This recipe makes the perfect cookie!

Quite good!
These have a lovely texture and the honey really highlights the peanut butter--quite smooth and rich! I used Smart Balance smooth peanut butter and regular butter--my local grocer doesn't sell the better sticks, but everything turned out quite well. I made the mistake of rolling the first batch in a little sugar before baking--eek! Far too sweet--the honey adds the perfect amount of sweetness, so don't fall into this trap. Otherwise, these are perfect just off of the cooling rack...already I've eaten too many.

delicious!!
This recipe is absolutely perfect. The cookies were chewy and tasted better then I could have ever expected!! I added one cup of oatmeal, two tablespoons of ground flax, about three tablespoons of low fat buttermilk and a bit of cinnamon and vanilla. Im sure the recipe if just as good without the additions but I haven't found a better recipe yet. Right when i almost gave up hope for low fat cookies.. these brought back hope!
