makes:8 servings (about 2/3 cup each)
6cups sliced unpeeled cooking apples (6 medium)
1/4cup frozen apple juice concentrate, thawed
1/2teaspoon ground cinnamon
3/4cup old-fashioned or quick-cooking oats
1/4cup Gold Medal® whole wheat flour
1/3cup packed brown sugar
1/4cup butter or no-trans-fat 68% vegetable oil spread stick, softened
1/2teaspoon ground cinnamon
1/4teaspoon ground ginger
Reduced-fat vanilla ice cream, if desired
1.Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, mix apples, apple juice concentrate and 1/2 teaspoon cinnamon until well mixed. Spread in baking dish.
2.In same medium bowl, mix remaining ingredients until crumbly. Sprinkle over apples.
3.Bake uncovered 25 to 35 minutes or until apples are tender and topping is golden brown. Serve with ice cream.

Apple Crisp
Could not find the apple type recommended so I used Galas. Made this recipe twice--first by the book. Was Ok but 1) a little dry on top after baking and 2) the apple skins were kind of tough. When I made it the 2nd time I added a tbsp melted Promise Light and peeled the apples prior to baking. Much better!

Love it
I make this dish all the time. It is just enough to satisfy my sweet tooth. I prefer to prepare it without skin. Did not like with skin on.

Husband comment
One reviewer commented that this recipe did not taste good cold. How would I know, my husband managed to snack on the leftovers all night until it was gone. I guess you could say that he like it hot out of the oven, warm, and cold. Great comment to the dish.

Substutions
This is almost like my standard Apple crisp recipe. This is healthier than mine. I add a cup of either cranberries or crainins and use nutmeg instead of ginger, I also add a cup of chopped wantuts to the topping. If you make the topping and keep it in the freezer, you can have mini crisps any time. I use 2 6oz ramekins per large apple and bake about 25 minutes

Very Yummy!

jazzlover - No brown sugar is not good for diabetes. But you could use Splenda brown sugar. This is great, easy and fast to make. I put it in the oven while we are eating dinner this way it is done just as we are ready for desert

delicious!
I made this the other night - using a 1/3 of the recipe and just kinda winging it (how do you measure a 1/12 teaspoon??). I forgot to buy apple juice concentrate, so instead I just used water and a single packet of no-calorie sweetener. I used Jonathan apples. I baked it for 25 minutes, leaving the skins on, and I thought it was delicious - so did my hubby!

A solution to the peel issue previously mentioned
The peel is left on the apples to boost nutritional content (fiber), so that's why it's a "healthified" recipe. Just peel the apples, then puree the peels in the food processor and add to the apple mixture.

I tried this and although very tasty, the apples should be peeled. The small amount of baking time did not help make the skin soft and was sticking in my throat. The 4 other people that tried the finished product agreed too, that the apples should be peeled.

This recipe is great, fast and taste out of this world! To make matters worse less carlories for someone who loves her sweets this one takes the cake ... or pie.
