Grilled Lemon Pepper Halibut and Squash Packs
Recipe Tip
C the Peppers
Bell peppers, regardless of their color, provide vitamin C also called ascorbic acid. Choosing vitamin C-rich foods keeps gums and blood vessels healthy.
Substitution
Try making these packets with whatever variety of summer squash you have on hand. Just use three medium squash.
Success
When you open the foil packet, keep the opening pointed away from you because very hot steam collects inside during cooking, and the steam could burn you.

Grilling foil bundles is the secret to creating moist and flavorful fish and veggies. From eatbetteramerica.

makes:4 servings
1lb halibut fillets (1/2 to 3/4 inch thick)
2teaspoons dried basil leaves
1teaspoon lemon pepper seasoning
1teaspoon seasoned salt
3medium zucchini or summer squash, cut into 2x1-inch strips
1medium red bell pepper, cut into 1-inch pieces
1tablespoon olive or vegetable oil
1.Heat coals or gas grill for direct heat. Cut four 18x12-inch pieces of heavy-duty foil; spray with cooking spray. Cut fish into 4 serving pieces if necessary. Place 1 fish piece on each foil piece. Sprinkle fish with 1 teaspoon of the basil, 1/2 teaspoon of the lemon pepper and 1/2 teaspoon of the seasoned salt.
2.Arrange zucchini and bell pepper over fish. Sprinkle with remaining basil, lemon pepper and seasoned salt. Drizzle with oil. Fold foil over fish and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
3.Cover and grill packets over medium heat 15 to 20 minutes or until fish flakes with fork and vegetables are tender. Place packets on plates. Cut large X across top of each packet; fold back foil.

I made this dinner for a group of people at a dinner party. I heard nothing but rave reviews about this healthy meal. I did modify it slightly however. I added both red and yellow onion into the pack along with a half clove of minced garlic per pack. It was cold outside so instead of doing this recipe on the grill I cooked it at 400 degrees for 20 minutes in the oven. It was delicious!

Easy and Yummy
I made this recipe and it turned out to be delicious. I modified it slightly by adding onions and a couple other spices, but the cooking method was great and so easy! The fish turned out perfectly and I'm sure there are other veggies you could try to mix it up a bit. Even my boyfriend couldn't stop saying how delicious it was.

My kids who are 13, 10, and 3 love these and they extremly simple and quick to make. I substitute Tilapia for Halibut though. We also love the Grilled Chicken and Vegetables Packs.

Super yummy!
This is such a fantastic recipe...I accidently used dried thyme instead of basil but it was still really good. I also added a little minced garlic, chopped onions, and lemon zest for some extra flavor. My boyfriend turned his nose up when I mentioned it for dinner...and then raved about it the rest of the night. He even wants me to cook it next time for his mom!
