makes:12 muffins

1cup fat-free (skim) milk
1/4cup vegetable oil
1tablespoon grated orange peel
1/4cup fat-free egg product or 2 egg whites
1cup Gold Medal® all-purpose flour
1cup Gold Medal® whole wheat flour
1/3cup sugar
3teaspoons baking powder
1/2teaspoon salt
3/4cup fresh or frozen cranberries, chopped
Additional sugar, if desired
1.Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray or place paper baking cup in each muffin cup.
2.In large bowl, beat milk, oil, orange peel and egg product with spoon. Stir in flours, 1/3 cup sugar, the baking powder and salt just until flour is moistened (batter will be lumpy). Fold in cranberries.
3.Divide batter evenly among muffin cups (cups will be full). Sprinkle with additional sugar.
4.Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.

Awesome muffins!
So, these turned out better than I could have imagined! I tweaked the recipe a bit... skipped the orange zest and used some cinnamon instead, used natural applesauce instead of oil, and substituted no-calorie sweetener instead of sugar... a great success! You might need a bit more milk than the recipe calls for, but otherwise, I would definitely suggest it. Fresh cranberries worked well!

Delicious!
These were very good. I did change the recipe a little,-substituted half of the oil with unsweetened apple sauce and sprayed the muffin pan instead of using paper muffin cups. I will definitely make these again!
