Special Touch
Get creative and serve this melt-in-your-mouth dip in a hollowed-out loaf of French bread. Be sure to cube the removed bread so you can serve bread pieces as dippers.
Variation
Replace tarragon with an equal amount of basil or oregano for an Italian flair.
This flavor-packed dip is perfect potluck fare. Surrounded by colorful veggies and crispy crackers, it’s almost as good to look at as it is to eat! From eatbetteramerica.

makes:4 1/2 cups dip (1 tablespoon each)

2packages (10 oz each) Cascadian Farm® frozen organic cut spinach, thawed
1can (8 oz) water chestnuts, drained, finely chopped
1cup reduced-fat sour cream
1cup Yoplait® Fat Free plain yogurt (from 32-oz container)
1cup finely chopped green onions (16 medium)
2teaspoons chopped fresh or 1/2 teaspoon dried tarragon leaves
1/2teaspoon salt
1/2teaspoon ground mustard
1/4teaspoon pepper
1garlic clove, finely chopped
Crisp rye crackers, rice crackers or raw vegetables for dipping, if desired
1.Squeeze excess moisture from spinach until it is dry. In glass or plastic bowl, mix spinach with all remaining ingredients except crackers.
2.Cover; refrigerate 1 hour to blend flavors. Serve with crackers.
