Add zing to your chicken breasts with chili powder and ground cumin. From Prevention Healthy Cooking.

Start to Finish:30 min
makes:4 servings
2teaspoons chili powder
2teaspoons brown sugar
1teaspoon ground cumin
4boneless skinless chicken breasts (about 1 1/4 lb)
2tablespoons olive oil
1can (7 oz) Green Giant® whole kernel sweet corn, drained
1/2small red bell pepper, chopped
1/2small cucumber, seeded and chopped
1/2cup Progresso® red kidney beans, rinsed and drained
3tablespoons lime juice
1/4teaspoon salt
1.In cup, combine chili powder, brown sugar and cumin. Rub both sides of chicken breasts with the spice mixture.
2.In large skillet, heat oil over medium heat. Cook chicken in hot oil 12 minutes, turning occasionally, or until instant-read thermometer inserted in the thickest portion reads 160°F and juices run clear.
3.Meanwhile, in medium bowl, stir together corn, red pepper, cucumber, kidney beans, lime juice and salt.
4.Evenly divide corn salsa onto 4 plates. Top each with a chicken breast.

What did i do wrong?
i tried making this recipe tonight. I am definitely a novice in the kitchen and am trying to eat healthier and cook for myself. The corn salsa came out fine, pretty hard to mess that up i suppose. But the chicken was not very flavorful. What did I do wrong? I tenderized then rubbed both sides with the spice mixture and cooked in a pan with some oil. Unfortunately the chicken came out very bland and boring. Should i let the meat sit in this spice mixture for some time? Please help...

a few changes- but good!
I used a zucchini instead of cucumber and also added cilantro and diced green chilis to the veggie mixture. I love what brown sugar does to chicken as far as taste so the chicken was a hit with me. I cooked the veggies, but reserved some to have the next day as a salsa.

delicious!
We really enjoyed this recipe. I made a lot of changes to the salsa though. I used frozen corn. Added onion, cilantro, chopped zucchini, red bell pepper, fresh chopped jalapeno, a few dashes pf chili powder and served it warm as a side. It was WONDERFUL! Also put the chicken on corn tortillas and served as tacos.

This was really good. I took the advice of others and made my salsa a few hours ahead of time to blend flavors. I added cilantro and chopped tomato and used canned black beans instead of kidney. I used store-bought rub, which was very good. I pounded the chicken breasts thin and then grilled them. This salsa would also be good as an appetizer with chips.

Wonderful with Modifications!
I also sliced the chicken in strips before coating and cooking. I too added cilantro to the salsa and served it all over a bed of romaine. It was amazing!!

Fabulous!!!
This was fantastic! The only thing I did different was put it on rice for my husband. I had it as is and it was great. I highly recommend it.

my version...
My family LOVES this recipe, and I have made it many times since discovering it. I have recently begun making it a bit differently by cutting the chicken into strips before coating & cooking and serving the chicken and salsa over a green salad with avacado and tomato slices. A sprinkle of chipotle hot sauce if you want it really zesty, and a dollop of lowfat sour cream and it is perfect! My teenagers devour it! Its also really pretty on the plate, just like a restaurant dish.

Made this for my boyfriend and his friend for dinner one night and it was a huge hit! They both are huge fans of spicy food and thought this satisfied their taste buds. Great recipe!!

Fast,easy,and delicious
My husband and I whipped this together while we had friends over and it got many compliments. Next time I will add a little red onion to the salsa and let the veggies drain some after I put the salt in so there is not so much juice. You can really add whatever veggies you like to the salsa!

Delicious!
The chicken was very flavorful. We didn't have chili powder so we substituted Lawry's seasoning and it still tasted great. I made the salsa earlier in the day and it made dinner preparations much faster. We'll definitely be making this again.

Great Recipe!
I printed the recipe and my husband put it together last night. We grilled the chicken instead of cooking indoors in a skillet. We also took a previous review recommendation and added cilantro. It was wonderful. I think next time we will add red onion too. We had leftover corn salsa so we plan to grill pork chops and use the salsa on that!

So good, so fast, so easy!
I love this recipe! I made it with a short list of ingredients I had on hand. I made it quick, easy and best of all it tasted fabulous. I was so excited to share it with my husband and sister who both loved it too. I served it over a bed of chopped romaine, to make a complete meal. I will be making this dish often!

Quick, Easy & Nutritious
This was a great recipe that was healthy and affordable. I prepared the chicken just as directed, but I added a small amount of chopped onion to the salsa, and I used a whole can of Kidney Beans. The chicken was juicy and delicious and the salsa was even better the next day as a healthy and filling lunch.

I made this for my family of 6. My 4 girls loved the chicken, but didn't like the corn salsa very much. I did warm the corn salsa though, we're not used to eating corn/beans cold, but even warmed I really enjoyed it.

Quick and Easy!!

ZESTY CHICKEN WITH CORN SALSA
This is a great summer recipe, cool yet tasty. I made the salsa the day before. The flavors had time to really mix. This chicken recipe was easy and I will definitely make it for my family again. Yum!
